You are not sure what to expect of Trattoria Sostanza, at least upon first glance of the narrow alleyway off Santa Maria Novella leading to its entrance. A long dining room with white tile wainscoting and walls strewn with newspaper clippings and family photos benefits from a daily rotating menu that many consider the best rustic Italian cuisine in all of Tuscany.
The Food
An open kitchen in the back of Sostanza yields a family of chefs in action over an open fire grill and wood-burning oven. Some of the cheapest (and best) wines y the glass accompanies boards of salami, soprassata and parma followed small plates of homemade pasta and both the signature butter-chicken and Bistecca alla Fiorentina - the two best dishes on the menu.

Small, family owned trattoria in Florence delivers best chicken dish you’ll have in Italy, and perhaps anywhere. Reservations are tough, so if you try a walk-in go later in the evening or for lunch.
